Giant cupcake recipe

cupcakeHere’s the recipe I used to make my giant cupcake, the tin comes with its own recipe for the sponge but it actually doesn’t come with an icing recipe so I have included my own. You can get the tin by clicking the banner below, where you will receive £5 off if it’s your first purchase:

Ingredients for sponge:

  • 1/2 cup (8 tablespoons) boiling water
  • 1/2 cup (8 tablespoons) cocoa powder unsweetened
  • 3 cups (24 ounces) all-purpose (plain) flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 sticks (339g) unsalted butter softened
  • 2 cups (16 ounces) granulated sugar
  • 1/2 cup (4 ounces) brown sugar firmly packed
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 cup (8 ounces) sour cream
  • 1 cup (8 ounces) mini semisweet chocolate chips

 

Ingredients for icing:

Coloured buttercream:

  • 200g butter (maybe more if you want it nice and thick)
  • 300g icing sugar, sifted
  • 30ml milk
  • 1/2 teaspoon of red food colouring

Chocolate buttercream:

  • Same as above but replace the 30ml of milk with 100g of plain or milk chocolate…

Dear poker God, give me a decent hand

After spending many boring nights watching Neil play poker, I decided to take up the game myself so that I could play alongside him. I usually play Ladbrokesonline (my alias is HannahBanana), and have come second place in the multi tournaments don’t know how many times! No big wins as of yet, think the most i’ve won from a tournament is £70. Still not bad for a student bum. I have won a pub tourney though but unfortunately there was no prize at the end of it. Still enjoyed beating all the guys though. And i’ve just completed a $4 high stack on Ladbrokes, came third winning £33, not worth the five hour play if you ask me. Just joined another 1k high stack with the winnings, with the way my luck is going maybe this will be my first online win?

A day out – good for the soul

Its amazing how the simplest things in life can make you feel.

 

Yesterday Hannah and I had a day out in St Andrews and Anstruther. We stopped in St Andys for a quick shifty round the shops; definitely not my favourite thing to do but in St Andrews it wasnt as bad. Maybe its the quieter streets, the quaint little original shops or perhaps its the historic surroundings. St Andrews has charm in bucket loads, little cobbled streets with dusty, mysterious book shops. The good thing is that its paired with the usual big brand stores, so it can suit a variety of tastes. The other thing about St Andrews is that for a small Scottish town it feels very multicultural something only to be found in the bigger cities, due Ive no doubt to the ever popular and acclaimed university.

 

So guys in Scotland, if the ‘missus’ is moaning for you…

Happy Anniversary

Today marks Neil and I’s third year together as a couple. To think this time three years ago I was a nervous wreck as I was just getting ready to meet him for the first time. I’d completely forgotten the purpose of our date (we were meant to be going for a swim and a sauna) and so forgot to take my swimsuit with me. I realised this just as i’d stepped out of the front door, and was just about to head back to the flat when I realised that i’d locked myself out! All in all a good start. I don’t even remember saying Hi. I think my first words were “Oh my god, oh my god, oh my god!!”, as I couldn’t believe that I was meeting someone from the internet. That and the fact that he was a good few years older than me and I had no idea…

Giant cupcakeFirstly I would like to thank Neil my lovely beau for making this site. It is the best present I have ever received and had no idea about it despite him blogging about it on his Twitter!

 

We have been together for almost three years now (our anniversary is on Tuesday!) The first time we met was pretty awkward, I put that down to his dodgy old tractor of a car. Truthfully I was just really nervous and didn’t know whether he liked me or not. Luckily something must have worked as here we are three years on, still going strong, and I look forward to spending many more years together.

 

As if that wasn’t soppy enough, I also made a giant love cupcake. The amount of sugar, cream and chocolate that went into it has kinda put me off though. That said, I wonder how long it will last?

My experiences of love, have Im sure like most peoples been a veritible roller coaster ride. Thankfully now settled and happy.

 

I have met people in life however that have never experienced ‘love’. I truly feel sorry for these people. Imagine never feeling the highs, the lows, the companionship, the laughter, the closeness, the sharing, the learning and the strength that comes from being in love and being loved. But I guess if you have never met that special someone then how could you know love of that kind and shouldnt be made to feel bad or unhappy for not finding it. Maybe however, some people can love easier than others and maybe some are incapable.

 

The one thing that I know for sure is that if there was more love and understanding in the world…
